CarniStore Meets The Lighthouse After Dark for a Six-Week Thursday Dining Series

Thursday nights are getting a little meatier in Dubai and Abu Dhabi this September as CarniStore and The Lighthouse join forces for a new six-week dining collaboration.

Launching on 24 September 2026, The Lighthouse After Dark x CarniStore will take over The Lighthouse Dubai Hills and Yas Bay, Abu Dhabi, every Thursday from 6pm onwards.

The concept brings together CarniStore’s premium cuts with The Lighthouse’s culinary approach, alongside curated cocktails and DJ sets designed to carry the evening from dinner into late-night drinks.

A CarniStore Menu Through The Lighthouse Lens

At the centre of the collaboration is a dedicated à la carte menu created around CarniStore’s selection of premium proteins.

Guests can start with dishes such as Smoked Brisket Rosti, Wagyu Chorizo Sausages in Brioche and Charred Steak Carpaccio.

For something more substantial, the menu moves into Wagyu Keftedes Skewers and Picanha with Burnt Aubergine, while those dining as a pair can opt for a Dry-Aged T-Bone for Two.

The emphasis is firmly on bold, generous dishes made for sharing-a natural fit for a Thursday evening spent around the table with friends.

It’s Not All About the Meat

While premium cuts are understandably at the heart of the collaboration, the menu goes beyond steak and Wagyu.

Seared Scallops add a seafood option to the line-up, while a Burrata & Nduja Pizzetta offers another sharing plate for the table.

And for those planning to stay through dessert, French Toast rounds out the selection.

The dishes are designed to work equally well for guests dropping in for drinks and a few plates or settling in for a full dinner.

Cocktails and DJs Take Over After Dark

Food is only one part of the experience.

Each Thursday, dishes will be accompanied by cocktails curated by The Lighthouse, with DJs taking over as the night progresses.

It’s an extension of The Lighthouse’s wider combination of food, drinks, music and culture, but with a different energy once evening arrives.

Chef Davisha Burrowes of The Lighthouse describes After Dark as an opportunity to bring those different elements together while creating a menu that feels “generous, bold and made for sharing.”

The intention is simple: come for dinner, discover something different and perhaps stay for another round longer than originally planned.

Two Cities, One Thursday-Night Concept

One of the best things about this collaboration is that it isn’t limited to Dubai.

The six-week series will run simultaneously at The Lighthouse Dubai Hills and The Lighthouse Yas Bay in Abu Dhabi, bringing the same Thursday-night concept to both cities.

For CarniStore, the partnership is an opportunity to take its premium ingredients beyond the traditional butcher-shop experience and place them in the hands of The Lighthouse’s culinary team.

The Lighthouse After Dark x CarniStore launches on Thursday, 24 September 2026, and continues every Thursday for six weeks from 6pm onwards.

The collaboration takes place at The Lighthouse Dubai Hills and The Lighthouse Yas Bay, Abu Dhabi, with a dedicated à la carte food menu, curated cocktails and music throughout the evening.

There is no set-menu price, allowing guests to order à la carte depending on whether they’re stopping by for a few dishes and drinks or turning Thursday night into a full dinner.

With Wagyu, brisket and dry-aged T-Bone on the table and cocktails and DJs taking over as the evening progresses, After Dark is shaping up as a new option for anyone looking for Thursday night dining in Dubai or Abu Dhabi this autumn.
