piehaus Is Launching a New ‘Counter Culture’ Series- Starting With an Emirati-Inspired Eid Pie

Dubai’s food scene continues leaning deeper into culture-led collaborations, and piehaus is the latest homegrown concept turning heritage into something more contemporary-this time through handcrafted phyllo pies.

Fresh off winning Best Bakery at the Time Out Dubai Restaurant Awards 2026, piehaus is launching its new Counter Culture Series, an ongoing collaboration concept bringing together chefs, creatives, and cultural voices across the UAE through limited-edition pies inspired by identity, storytelling, and regional flavours.

The first collaboration arrives just in time for Eid Al Adha, featuring acclaimed Emirati pastry chef Sahar Al Awadhi and a nostalgic new creation called the Chebab Pie.

Launching on 26 May and available until 7 June, the limited-edition pie reimagines the traditional Emirati chebab pancake through piehaus’ signature flavour-forward style.

The collaboration brings together Chef Sahar’s modern take on Emirati culinary identity with the bold, layered style of piehaus founder Stasha Toncev and chef Milan Jurkovic, whose phyllo-based creations have quickly become one of Dubai’s more interesting bakery success stories.

What makes the Counter Culture Series particularly interesting is that it feels less like a standard chef collaboration and more like a reflection of Dubai’s evolving food identity – where multicultural influences, local heritage, and contemporary presentation increasingly intersect.

According to piehaus, each future edition of the series will invite different chefs and creatives to reinterpret personal memories, regional flavours, and cultural narratives through limited-run pies released throughout the year.

For Eid Al Adha specifically, the Chebab Pie will also be available in a family-sized format designed for shared gatherings and long-table celebrations, with pre-orders available 24 hours in advance.

At a time when Dubai’s dining scene is becoming increasingly saturated with trends, concepts like this stand out because they feel personal- rooted in local storytelling while still speaking to the city’s modern, globally influenced food culture.
