RAW Coffee Company Launches PROOF Bakery in Dubai with Fresh Breads, Croissants and Pastries
Dubai’s specialty coffee scene is getting a freshly baked addition. RAW Coffee Company has launched PROOF Bakery, a new in-house bakery concept bringing made-from-scratch breads, pastries and baked goods directly into the RAW Café experience.
Launched in September 2026, PROOF Bakery is located within RAW Café and has been developed by RAW’s own F&B team. The concept is designed to complement the homegrown company’s established specialty coffee offering while creating a new reason to stop by for breakfast, a quick pastry or freshly baked bread to take home.
And for anyone who enjoys seeing how their food is made, there’s another detail worth noting: open windows overlooking the café give guests a view into the baking process.
What’s on the Menu at PROOF Bakery?
PROOF launches with a broad selection covering everyday breads as well as café-friendly pastries.
The initial range includes sourdough and white loaves, brioche buns, plain and olive ciabatta, simit and baguettes.
On the sweeter side, expect butter, almond and chocolate croissants, cinnamon buns and a rotating selection of danishes.
Everything is made from scratch in-house, giving RAW greater control over the quality and consistency of its food while allowing the bakery team to continually develop the menu.
PROOF also plans to introduce regionally inspired baked goods as the concept evolves, with future products responding to customer preferences.
Coffee and Fresh Baking Under One Roof
Specialty coffee remains at the centre of RAW’s identity, but PROOF signals a broader evolution for the Dubai-born business.
Pairing freshly baked pastries and breads with coffee is a natural extension of the café experience, while producing them internally allows RAW to create products specifically around its existing food and beverage offering.
“The launch of PROOF marks an important step in RAW’s evolution as a business,” said Matt Toogood, CEO of RAW Coffee Company, adding that the company is exploring complementary areas that build on its existing expertise and changing customer needs.
The ambitions for PROOF may eventually extend beyond RAW’s own cafés too. The company sees potential for the bakery to develop into a B2B offering, supplying a wider hospitality market as the concept grows.
RAW Café Gets a New Work-Friendly Space
The bakery isn’t the only new addition.
Alongside PROOF’s launch, RAW has revamped the mezzanine level at RAW Café, creating a more comfortable, work-friendly environment.
The refreshed space is intended for customers who want to settle in for longer-whether that’s catching up on emails over coffee, holding an informal meeting or simply spending an afternoon working away from the office.
It reflects how Dubai’s café culture continues to evolve, with coffee shops increasingly doubling as places to work, meet, eat and socialise rather than serving as quick coffee stops alone.

For RAW Coffee Company, PROOF Bakery represents a natural progression from specialty coffee into a more complete café experience.
