FALCONE Dubai Collaborates with Chez Wam for an Exclusive Pizza Experience from 16-22 October 2026
Dubai’s dining scene is getting a creative Italian-French twist this October as FALCONE teams up with Chez Wam for a limited-time culinary collaboration. From 16 to 22 October 2026, Chef Roberta De Sario and Chef Hadrien Villedieu will bring together Neapolitan pizza craftsmanship, French cooking techniques and globally inspired flavours.
The week-long collaboration launches on Friday, 16 October, with a specially curated dining experience. Guests can also order the collaborative dishes individually from FALCONE’s à la carte menu throughout the week.
Two Acclaimed Chefs, One Creative Pizza Collaboration
The collaboration brings together two chefs with distinctive culinary backgrounds.
Chef Roberta De Sario, originally from Naples, has more than a decade of experience in pizza-making. Having worked internationally, including in Hong Kong and Dubai, she currently leads the kitchens at FALCONE and Motorino. She was ranked No. 63 in The Best Pizza Chef 2026 selection.
Joining her is Chef Hadrien Villedieu, the French chef behind Chez Wam. His international experience spans France, New York, Saint Barthélemy, Morocco and Dubai, influencing a cooking style that combines classical French techniques with global flavours.
Chez Wam was ranked No. 40 in MENA’s 50 Best Restaurants 2026 and is also featured in World’s 50 Best Discovery and the Gault & Millau 2026 guide.
What’s on the FALCONE × Chez Wam Special Menu?
The collaboration introduces inventive pizza creations that combine traditional Italian foundations with unexpected ingredients.
Two featured dishes include:
- Cinque Formaggi: A five-cheese pizza paired with Medjool dates, thyme and chilli honey, combining savoury, sweet and spicy flavours.
- Fried & Baked Pizza: A pizza topped with beef tartare, Parmesan cream and a cloud of aged 24-month Comté cheese.
The menu reflects both chefs’ willingness to experiment with textures, ingredients and techniques while keeping pizza at the centre of the experience.
A Limited-Time Dining Experience in Dubai
Unlike a one-night-only chef collaboration, FALCONE × Chez Wam will run for seven days, allowing diners to experience the special dishes throughout the week.
The collaboration begins with a curated launch experience on 16 October, followed by the availability of individual creations on the restaurant’s à la carte menu until 22 October.
For food enthusiasts interested in creative pizza concepts and chef-led dining experiences, the collaboration offers something different from a traditional Italian pizzeria menu.
