piehaus Unveils Counter Culture Edition 004 with Pure Harvest
For the first time, Counter Culture extends beyond piehaus, connecting both piehaus and 21grams through a shared collaboration with long-standing produce partner, Pure Harvest.
The fourth edition of piehaus’ Counter Culture takes the collaboration beyond the kitchen, highlighting the people and produce behind some of the brands’ most-loved dishes.
Running from 23 July to 23 August, Counter Culture Edition 004 brings piehaus and sister restaurant 21grams together for the first time through a shared partnership with UAE produce brand Pure Harvest.
Guests can try two limited-edition creations at both restaurants, with a complimentary pack of Pure Harvest blackberries available for the first 50 guests who order from the special menu.
Two Limited-Edition Creations
The Summer Basket Phyllo Pie, priced at AED 54, layers hand-stretched phyllo with brown butter cream cheese, Pure Harvest strawberries and blackberries. Edible flowers complete the seasonal dessert.
The Spanakopita Salad, priced at AED 58, combines crispy phyllo with roasted beetroot, Pure Harvest spinach and blackberries, goat cheese, glossy pecans, sesame seeds and strawberry dressing.
Both dishes showcase Pure Harvest ingredients through the distinct culinary style shared by piehaus and 21grams.
Celebrating the People Behind the Ingredients
Counter Culture was created as an ongoing platform for unexpected culinary collaborations. Previous editions brought chefs from different backgrounds together to explore new ideas through handcrafted phyllo.
Edition 004 shifts the focus to the producer. Pure Harvest ingredients have been used across piehaus and 21grams for years, although diners may not have been aware of the partnership behind the dishes.
“Great food doesn’t begin in the kitchen. It starts with the people who grow the ingredients,” says Stasha Toncev, founder of piehaus and 21grams.
The collaboration celebrates UAE-grown produce and the relationships between restaurants, growers and suppliers that shape what eventually reaches the table.
