Avatara Dubai Launches RE, a New Wine and Beverage Pairing Experience

Dubai’s Avatara is extending its approach to modern Indian dining beyond the food with the launch of RE, a new wine and beverage experience built around the idea of transformation and rebirth.

Launching on 15 October 2026 alongside Avatara’s new food menu, the concept introduces four different pairing journeys spanning wine, cocktails, mocktails and Champagne.

But rather than simply selecting drinks that work well alongside each course, RE gives every glass a story – whether that’s a forgotten grape variety finding new life, an old winemaking technique being revived or a familiar Indian flavour appearing in an unexpected form.

What Is RE?

Avatara’s food has long been centred around reinterpreting traditional Indian ingredients and flavours through a contemporary fine-dining lens.

RE applies that same philosophy to what’s in the glass.

The name draws on the idea of reincarnation – taking something that already existed and giving it a new form.

That starts with flavours that will be immediately familiar to many diners.

Cucumber, traditionally associated with freshness and cooling, is transformed through gin and basil into a more aromatic contemporary pairing.

Chai gets an even more recognisably Indian reinterpretation. Inspired by Kathiyawadi-style tea, it appears as a cold beverage that retains the spice and character of chai while presenting it in an entirely different format.

The Wines Have Their Own Stories of Transformation

The wine experience follows the same idea, with bottles selected not only for their flavour but for the story behind them.

Lingua Franca Pinot Noir, for example, connects Burgundy’s winemaking traditions with Oregon’s Willamette Valley, bringing a Burgundian influence into a different landscape.

Catena Zapata Malbec tells another story of reinvention.

Originally associated with France, the Malbec grape found a new identity in Argentina, particularly in Mendoza’s high-altitude vineyards. The different climate and growing conditions helped turn it into one of the country’s most internationally recognised wines.

Then there’s The Dead Arm Shiraz, perhaps the most literal example of the RE philosophy.

Its name refers to a vine disease where one arm of the vine becomes lifeless while the remaining arm directs its energy into fewer grapes, resulting in more concentrated fruit.

Elsewhere, the wine list explores indigenous grape varieties that have been rediscovered, traditional winemaking practices being revived and historic styles finding a place with contemporary producers.

Choose From Four Different Beverage Journeys

RE isn’t limited to wine, which makes the concept more accessible to diners looking for different ways to experience the tasting menu.

From 15 October, guests can choose between four pairing experiences:

Wine Experience: Four glasses for AED 750
Cocktail Experience: Four glasses for AED 495
Mocktail Experience: Four glasses for AED 390
Champagne Experience: Three glasses for AED 750

The inclusion of a dedicated mocktail journey is particularly useful for diners who want the full pairing-style experience without alcohol.

Rather than treating the non-alcoholic option as an alternative afterthought, it forms part of the same broader storytelling concept.

A New Chapter for Avatara’s Dining Experience

Pairing menus are hardly new to fine dining, but RE is attempting to make the drinks themselves part of Avatara’s narrative.

The recurring theme is transformation.

A grape moves countries and develops a new identity. A traditional winemaking technique disappears and later returns. A familiar ingredient like chai is taken out of its usual setting and served in an unexpected way.

That mirrors the restaurant’s wider approach to Indian cuisine, where familiar ingredients and culinary traditions are continually reinterpreted rather than simply reproduced.

With the new food menu and RE both launching on 15 October 2026, diners can now experience that philosophy across both the plate and the glass.
