21grams Retains Its MICHELIN Bib Gourmand in Dubai for the Fourth Year Running
Dubai’s homegrown Balkan bistro 21grams has retained its MICHELIN Bib Gourmand for 2026, marking the fourth consecutive year the restaurant has received the distinction.
The recognition was announced at the MICHELIN Guide Dubai Ceremony on 6 October, continuing a run that began when 21grams received its first Bib Gourmand in 2023.
For diners, the Bib Gourmand is particularly useful because it recognises restaurants offering high-quality cooking at good value – and for 21grams, it places the independent Dubai restaurant among the city’s consistently recognised dining spots.
A Dubai-Grown Balkan Bistro
21grams opened in 2018 with a focus on the food, culture and hospitality of the Balkan Peninsula.
Rather than approaching Balkan food as fine dining, the restaurant built its identity around comforting, sharing-style dishes made with an emphasis on traditional flavours and handmade cooking.
Its food draws from the wider region, with influences stretching across Eastern Europe, Greece and Turkey, while seasonal ingredients and locally and regionally sourced produce also feature across the menu.
Almost a decade later, the restaurant has retained much of that original identity while continuing to introduce new ideas.
Roots and Test Kitchen: How the Menu Is Evolving
Under the culinary direction of Executive Chef Milan, the current menu is built around two ideas: Roots and Test Kitchen.
Roots represents the dishes that have helped define 21grams and remain closely connected to its Balkan identity.
Test Kitchen provides a more experimental space for Chef Milan and his team to work with seasonal ingredients, different techniques and new combinations.
It’s a format that allows the restaurant to evolve without constantly replacing the dishes regular guests return for.
That balance between familiarity and experimentation has become an important part of the restaurant’s approach as it moves closer to its tenth year in Dubai.
What MICHELIN Says About 21grams
The MICHELIN Guide describes 21grams as a warm neighbourhood “urban Balkan bistro”, highlighting its sharing-style food, homemade cooking and fresh flavours.
The Bib Gourmand distinction itself is awarded to restaurants recognised for offering good-quality cooking at particularly good value.
Receiving the distinction once can put an independent restaurant on the radar. Retaining it for four consecutive yearspoints to something equally important in the restaurant industry: consistency.
For founder Stasha Toncev, that consistency comes back to the principles the restaurant was originally built around.
“Four consecutive years means a lot. Sustaining and evolving a homegrown restaurant for almost a decade takes care, commitment and consistency,” she says.
Toncev credits Chef Milan and the wider team while also highlighting the community of guests who have continued visiting the restaurant since its earlier years.

Why 21grams Remains One to Know in Dubai
Dubai’s restaurant landscape changes quickly, with new international concepts and major hospitality names entering the market every year.
Against that backdrop, 21grams represents a different part of the city’s dining story: a homegrown independent restaurant that has gradually built its reputation over several years.
Its fourth consecutive MICHELIN Bib Gourmand adds another milestone, but the restaurant’s appeal remains rooted in something considerably simpler – handmade comfort food, generous portions designed for sharing and a relaxed interpretation of Balkan hospitality.
If you’re exploring MICHELIN-recognised restaurants in Dubai without necessarily looking for a fine-dining experience, 21grams remains one to have on your list.
