Pai Thai and Blue Elephant Join Forces for Two Special Thai Dinners and a Masterclass in Dubai
Dubai’s Thai food scene is getting a special collaboration this October as Pai Thai at Jumeirah Al Qasr welcomes Blue Elephant founder Master Chef Nooror Somany Steppe for two evenings dedicated to Thai cuisine, heritage and traditional recipes.
Taking place on 16 and 17 October 2026, the collaboration will see Master Chef Nooror join Pai Thai’s Head Chef Amara Mahayothee to create special three- and five-course four-hands menus.
For those who would rather learn the recipes themselves, the chefs will also host an intimate Thai cooking masterclass on 17 October, followed by a three-course lunch.
Two Chefs, Two Restaurants and One Thai Menu
The four-hands dinners bring together dishes and influences from both Pai Thai and Blue Elephant, the internationally recognised Thai restaurant and culinary brand founded by Master Chef Nooror.
Rather than simply putting signature dishes side by side, the collaboration explores recipes connected to different regions, traditions and moments in Thai culinary history.
One of the menu highlights is the “Naam Dokmai” green mango lobster salad, prepared using mango from Master Chef Nooror’s native province.
Guests can also expect an organic green chicken curry with Thai sweet basil and kaffir lime leaves, along with ribeye served with Blue Elephant Black Diamond garlic, GI pepper and a touch of truffle.

Traditional Thai Recipes With a Story
Some of the most interesting dishes on the menu look further into Thailand’s culinary history.
The jumbo river prawn tom yum recreates a traditional preparation served during the reign of King Rama V in the late 19th century.
Dessert brings the collaboration closer to Dubai.
A date cake combining Emirati dates with Thai mung bean and jasmine essence takes inspiration from a recipe belonging to Master Chef Nooror’s late mother.
It’s a small but meaningful connection between the chef’s Thai heritage and the UAE setting in which the menu will be served.
Join a Thai Cooking Masterclass on 17 October
If you’d rather get behind the dishes than simply eat them, Pai Thai is also hosting a hands-on culinary masterclass on Saturday, 17 October from 11 AM to 2:30 PM.
Master Chef Nooror and Chef Amara will guide participants through four Thai favourites:

Yam Som O, a Thai pomelo salad; Chor Muang, traditional flower-shaped dumplings; Gaeng Phed Goong, a Thai prawn curry; and Khao Niew Ma Muang, the much-loved mango sticky rice.
Alongside learning the cooking techniques, participants will hear more about the cultural stories and traditions behind each recipe.
The experience finishes with a seated three-course lunch at Pai Thai.
